Foodie Favorite: Baked Chicken and Beets

Ingredients

  • 2 chicken breasts
  • 1 Tbsp melted butter or olive oil
  • 1/2 tsp salt
  • 1/8 tsp fresh cracked pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp paprika
  • 1 large beet
  • 3 golden beets
  • 1 tsp everything but the bagel seasoning
  • drizzle of olive oil

Instructions

Place chicken in a bowl with lukewarm water and handful of salt to brine for 15 minutes. Don’t skip this step as it will make your chicken incredibly juicy. 

Chop the beets and place on baking sheet, drizzle with olive oil and sprinkle with everything but the bagel seasoning. 

Remove chicken from brine and rub in butter or oil. Place on baking sheet and sprinkle with spice mixture. 

Bake at 450 degrees for 15 minutes.

Let the chicken rest for five minutes before serving. Serves two. Enjoy!
